Led by Lee Murdoch, our process begins with understanding your brand, analysing the competitive landscape, and designing menus that are both creative and commercial.
With a background in leading hospitality groups like Trump Turnberry, D&D London and St. Regis, Lee brings sharp commercial insight and culinary innovation to every project. He works closely with restaurant teams to ensure new menus are trained in with precision, building confidence and consistency across the kitchen.
Beyond dish creation, Lee focuses on developing the people behind the pass - mentoring chefs and building high-performing kitchen cultures that deliver results long after launch.

Culture Rebel delivers dynamic Front of House (FOH) and Back of House (BOH) training designed to align team performance with outstanding guest experiences. With eight years experience at Turtle Bay Restaurants, Francesca leads FOH development, bringing a strong background in developing people pathways and a passion for ensuring the employee experience mirrors the guest journey - engaging, consistent, and full of energy.
Back of House training is led by Lee Murdoch, offering structured skills development and mentorship from Chef de Partie to Head Chef level. With his background in top-tier kitchens like D&D London and St. Regis, Lee empowers kitchen teams to grow in confidence, capability, and collaboration.
Together, Francesca and Lee help restaurants build stronger, more connected teams ready to deliver excellence at every touchpoint.
